A family story, spanning half a century
There are places that withstand the test of time not because they adapt to everything, but because they remain true to something. The Forno di Ravacciano is one of these. Founded by brothers Gianfranco and Daniele Brogi over 50 years ago, it is now carried on with the same passion by the new generation, embodied by Giolisca Brogi, a central figure in a project that is first and foremost a family story.
Giolisca preserves recipes, gestures, and secrets passed down through time, and she does so with the calm naturalness of someone who knows that certain things are not reinvented, they are passed down.
Bread, faithful to tradition
At the heart of it all is the Tuscan bread: crunchy crust, compact crumb, authentic flavor. Prepared without salt, according to ancient regional tradition, with selected raw materials, simple doughs, and long, slow rising times, essential for a healthy, fragrant, and highly digestible product.
Alongside the classic, the bakery offers beloved variations: cereal bread, turmeric bread, breads with seeds and spices, fragrant focaccias, and the famous ciaccino with extra virgin olive oil, the one that the Sienese have always known and that visitors can never forget.
The sweets, a highlight
The Sienese tradition in every bite
The pastry production of the Forno di Ravacciano is a chapter in itself. Ricciarelli that melt in your mouth, panforte fragrant and spiced, panpepato rich and aromatic, cavallucci, torta di Cecco, torta Fiorita: each sweet is born from ancient recipes, respected in flavors but made closer to contemporary taste, without ever losing their identity.
Everything is artisanal, all made with selected ingredients and that care that only those who truly love their craft can put into every tray.
The Bottega di Ravacciano
The bakery's point of sale is much more than a shop: it is a place where aromas guide the choice, where every product is carefully packaged and also thought of as a gastronomic souvenir to take away. A bag of ricciarelli, a slice of panforte wrapped in paper, a loaf of warm bread: simple and authentic gifts that tell the story of Siena better than any postcard.
