The milk, the pasture, the territory: where flavor is born
Wild herbs, hill air, and Tuscan flocks
The Pecorino Toscano DOP is produced exclusively with whole sheep's milk, coming from flocks raised in Tuscany and in some neighboring areas of Lazio and Umbria. This is not a technical detail, it is the heart of the product. The pasture rich in wild herbs, the air of the hills and woods, the seasons that mark the rhythms of farming: all this ends up in the milk, and from the milk it passes into the cheese: every shape is a portrait of the territory that produced it. In the eighteenth century, it was known as "cacio marzolino", because production began in March, when the milk from the sheep, after the spring pastures, was richer, fragrant, and full of life.
Fresh or aged: two characters, one excellence
The fresh: delicate, soft, immediate
The Pecorino Toscano fresco has a light and soft texture, a delicate and milky flavor that captivates without overwhelming. It is the cheese of happy simplicity, perfect both on its own and paired with a drizzle of honey or a fig or pear jam. A taste that evokes spring and a freshly awakened countryside.
The aged: compact, aromatic, memorable
With time, everything changes. The Pecorino Toscano stagionato becomes more compact, more intense, more complex: notes of hay, dried fruit, and pasture herbs layer into a flavor that lingers. Aging often occurs in natural environments, where the surrounding air contributes to the development of aromas that no industrial process can replicate. The result is a cheese that varies significantly from area to area, from producer to producer, making each shape a unique and unrepeatable product.
In the kitchen and at the table: a cheese without borders
From the cheese board to pasta: the versatility of a Tuscan symbol
The Pecorino Toscano DOP is one of the most versatile cheeses in Italian tradition. It is enjoyed at the table with honey and jams, grated over pasta (the pici al pecorino is an essential Sienese classic) and enriches historic dishes like ribollita. On every traditional cheese board, it lies next to Sienese cured meats, black crostini, and a glass of red wine from the hills: an ensemble that tells the land of Siena better than any words. The Protected Designation of Origin, obtained in 1996, today safeguards this millennia-old tradition, ensuring that every shape of Pecorino Toscano DOP is truly a product of its territory.
