The varieties of truffle in the Siena Lands
The truffle is one of the main products of Siena and its territory. In the Siena Lands, there are four main varieties: white truffle, black truffle, bianchetto truffle or marzuolo, and scorzone truffle.
The main area for the spread of white truffle is that of the Crete Senesi, particularly Asciano and San Giovanni d’Asso, while black truffle is mainly found in the Montagnola Senese. The scorzone is primarily located between Chianti and Val d’Elsa, while bianchetto is present in the Val d’Arbia.
The white truffle of the Crete Senesi is considered one of the most prized in Italy.
The search for truffles
The search for truffles is a tradition that is still very much alive in the area. The discovery occurs thanks to the work of the truffle hunter and his trained dogs, capable of locating the precious fungus hidden underground.
The collection is regulated by the Region and is allowed only during certain periods of the year.
From the earth to the table
The truffle finds its place in many preparations of the local gastronomic tradition: on pasta, on crostini, in sauces, on eggs, and in cheeses.
Those who wish to purchase it can find it in specialized shops, in points of sale for typical products, and during the Mercato nel Campo, where local producers offer fresh truffles and derived products.
Experiences and curiosities
In Siena, there are various entities that organize experiences for tourists related to truffle hunting and tastings.
Among the initiatives in the area is also the Treno Natura to Asciano and San Giovanni d’Asso, organized during events dedicated to truffles.
An interesting curiosity concerns its environmental value: the truffle is considered an environmental sentinel, as it only grows in the presence of balanced ecosystems and where pollution is low.
