Scuola di Cucina di Lella: Siena through Taste

The first way to truly connect with a city is to taste it. Touching the ingredients, kneading, recreating a typical dish means getting closer to its deeper history, its origins, and the way a culture is passed down at the table.

The Scuola di Cucina di Lella, led by Francesco Cappelli, is the most historic cooking school in Siena. Founded in 1996, it is now a reference point for those who wish to discover true Tuscan cuisine through a practical, authentic, and convivial experience.

Francesco Cappelli and Lella's Legacy

Francesco Cappelli is the owner and sommelier of the school. A geology graduate, he chose to follow his true calling: the world of taste. After culinary specialization courses and experiences in the kitchens of various restaurants in the Siena area, in 2014 he meets Lella Cesari Ciampoli, the founder of the school.

From that moment on, he joins as a collaborator and, since 2015, becomes her right-hand man at the Fontebranda location. In 2024, he officially inherits the management of the school, carrying on Lella's philosophy with passion, professionalism, and a personal touch that combines tradition and innovation.

Tuscan and Italian Cooking Courses

The school offers courses dedicated to Tuscan cuisine, fresh pasta, traditional desserts, typical Sienese dishes, and Italian cuisine, with lessons also available in English.

Francesco is a third-level AIS sommelier, a skill that enriches the courses with insights on wine, pairings, and tastings, making the experience even more complete.

A Practical and Convivial Experience

The lessons are practical and engaging: participants cook alongside the chef, learn techniques, secrets, and recipes, and at the end taste the prepared dishes, sharing a typically Italian convivial moment.

Each course includes detailed handouts, useful for recreating the recipes at home, and provides a certificate of participation, perfect as a keepsake of the experience. The school also organizes private courses, home lessons, and special paths such as the gluten-free course, taught by specialized pastry chefs.

A Welcoming Kitchen in the Heart of Siena

The environment of the school is welcoming and authentic: a large professional kitchen, copper pots, traditional utensils, and a family atmosphere that immediately puts participants at ease.

Highly appreciated by international visitors, Scuola di Cucina di Lella is considered one of the most genuine experiences to enjoy in Siena, thanks to the combination of culture, gastronomy, and conviviality.

Participating in a course with Francesco means discovering Tuscan cuisine through the hands of a passionate professional, capable of telling recipes, ingredients, and traditions with enthusiasm and expertise.

Experience Scuola di Cucina di Lella as an authentic encounter with Siena, through recipes, ingredients, and flavors that tell the tradition.
